Preheat oven to 325°F. Line a baking sheet with tin foil sprayed with non-stick spray. Measure out all ingredients and combine the honey, maple syrup and butter. Microwave until butter is melted (about 25-30 seconds). Then add salt, vanilla and cinnamon to the honey mixture and stir. Place nuts in a medium size bowl, pour the prepared cookie sheet (in single layer) and bake for 20 minutes, stirring every 5 minutes so that the honey mixture is evenly coating nuts. Remove from oven and sprinkle with sugar over nuts. Let nuts cool until coating is hard. Stir occasionally to prevent nuts from clumping. When completely cool, store in an air tight container.
